Use Your Noodle

Today, I’m thankful for my education. I was blessed to go one of the best engineering schools in the country. Rose-Hulman was hard– like turn your brain to lime jello hard– but it’s given me the opportunity to pursue a career in a great field (and I met Kevin there, too)!

After posting photos of our Thanksgiving dinner on Monday I’ve had several requests for my homemade noodle recipe. I’m more than happy to share it, although, I must confess that this is my mom’s recipe for homemade noodles, not mine. She makes these noodles every Friday night in her restaurant and has been making them for her grateful family for longer than I can remember. That being said, if you’re living in southern Indiana, avert your eyes, don’t bother with this recipe, and go to Millie’s Cafe for the noodles.

Ingredients:

4 cups all purpose flour
4 eggs
4 tsp. kosher salt
8 Tbsp. milk

Prep:

  1. Mix all ingredients together. Try not to “over-mix” your ingredients– just go until everything is loosely combined. Over-mixing will create gluten which will make chewy noodles.
  2. Gently knead dough into ball on the counter, then cover and allow to rest for at least 10 minutes to allow the flour granules to hydrate.
  3. Once rested, roll the dough as thin as you can (1/8″ is ideal), liberally flouring everything (this dough is a little on the sticky side).
  4. Roll the dough into a long jellyroll and slice into rounds or use a pasta roller to roll and cut the noodles.
  5. Unroll the noodles and coat liberally with flour.
  6. Leave noodles on the counter for about half an hour to dry, or place them on a cookie sheet in the freezer for about an hour. I prefer the freezer method, but if you don’t have space, the counter is just fine.
  7. Boil your noodles in broth (turkey, chicken, beef… doesn’t matter, but homemade is better!) for about 15 minutes.

Those proportions make enough noodles for about 8 people, just for scale. The dough will seem too salty, but it’s not.

Anyone STILL eating leftovers? I think I’m going to freeze our leftover turkey today and call it done. I’m afraid I’m going to turn into a turkey if I eat another bite of it!

    Thank you for sharing this recipe! I am super excited to try this (they look amazing!). I probably would’ve been silly and just boiled them in water but I really like the idea of broth for extra flavor!!
